Find good rack....
Score at 1cm. Not too deep. Just the fat layer.
Dry with paper towel.
Put in fridge uncovered for at least 2 hours to continue to dry out... Overnight would be good.
Oil and salt.

Cook at 250 degrees C for 25 mins.... (Crank up your BBQ)
Reduce heat to 160 and cook until juices run clear. This one took about 2 hours on the Christmas day BBQ.

Carve up!
Eat.
