Quick & Easy Lunch Ideas for Travelling

I am looking for quick and easy Lunch suggestions for a trip to The Simpson Desert next month. We will be stopping for lunch breaks and want some ideas that don't take long to prepare with minimum of fuss and work.

We usually do the likes of Country Cheese biscuits with tomato and cheese. Other options are simple sandwiches, open grills on the griller (but have to wait a few minutes to cool down before taking off ) etc.

Good old hot dogs in the thermos. Put them in the thermos in the morning and serve for lunch. Hard thing out there though is fresh bread

salada biscuts, with cheese, tomato, ham or vegemite for later in the trip when you run out of fresh bread. When travelling we wanted a quick and easy lunch.
