I was not aware of Dan Lepard. So thanks for the link and I will read this article.

Always interested to see some pictures of what you are baking.

I am confused (easily done nowadays) as to whether you are using plain white flour or not. I see in the article that his recipe calls for strong white bread flour.

I am a keen Soughdough baker and have learnt little or no knead techniques from many sources. I am fortunate that our local library has many books on baking bread and have been very obliging in ordering in any new baking book I request.

Too keep my bread machine warm as the dough gets mixed and rises I put a T towel over it but remove it during the baking cycle, works well on these cool days, took Mrs D out to a friends then I stopped at a mates on way home, whilst having coffee remembered the bread, raced home it wasn't on fire but it was steaming away like a pudding, a huge steamed sourdough loaf, actually turned out quite good once it had cooled down ........... I'm lazy now just use the packet stuff.
