Hi @mikerezny , I have followed your posts with interest, esp. the Fougasse one. Have you ever tried using Dan Lepard’s method of minimal kneading to make a loaf. Link as follows - https://www.bbc.co.uk/food/recipes/easy_white_bread_37005
I find it very successful. Also no need to only use white flour I have found.

I was not aware of Dan Lepard. So thanks for the link and I will read this article.

Always interested to see some pictures of what you are baking.

I am confused (easily done nowadays) as to whether you are using plain white flour or not. I see in the article that his recipe calls for strong white bread flour.

I am a keen Soughdough baker and have learnt little or no knead techniques from many sources. I am fortunate that our local library has many books on baking bread and have been very obliging in ordering in any new baking book I request.

Hi Mike,
I use bread flour or mixes from the following online shop - https://basicingredients.com.au/shop/basic-ingredients-crusty-sourdough-style-bread-roll-mix-1kg/. They do a pizza mix as well, plus sell many types of flours. I found them during covid lockdown.
I have tried sourdough a few times, but tend to get distracted and the culture fails!
A year ago I attended a sourdough class at Morpeth Sourdough with Steve Arnott and his wife Alison. A great day…
