Hey @Lisyloo317 just a thought, the van already has the three things you are after fridge, air con and MW, if you are after more fridge space a lot of people use a portable Waeco or Engel's in various sizes and put these just outside the door and plug them into the external powerpoint, moving all the insides around might end up costing a bit and this way you get another fridge or freezer and it is portable so you can put it in the back of the ranger and take it on day trips as well.

Install a roof mounted aircon @Lisyloo317 and that will solve the aircon/microwave space issue when upgrading fridge.
