@S&k,
I have seen boxes up to 2.1m wide, but that is about as wide as the van, so a 1.9m wide box with an angled corner is popular.
As for height, most people stop at 500mm and anything from 400mm to 600mm deep.
The larger boxes are usually custom made. But here are a few sites that do offer 1.7m to 1.9m x 500mm H x 600mm D.
It all depends on what you want to store and how you want it to look, along with the weight considerations and how you are going to access your spare tyre, or if you are going to relocate it.
@crustt posted these toolbox manufacturers, so they might help…
Here you go, how much time have you got?

Here's an example of a power coated Dimond T that I fitted to my 2013 17.56-2 outback last year. (Standard drawbar)
Hi Gulewis,I picked mine up from super cheap and painted it black. I simply relocated the spare to the rear bar using a drop down tyre carrier and welded 50mm angle across the A-frame to support the box and gas bottles. I can't tell you the dimensions of the tool box off the top of my head but what I can say is it takes a weber baby q and honda eu10 side by side with plenty of room to spare for hoses, annex, ect.View attachment 20705
